If you just can’t wrap your head around the paraffin wax, here is an alternate recipe and method from Cookies and Cups...
Ingredients
- Balls:
- 1-1/2 c. Swerve confectioners
- 1/2 c. butter, softened
- 1 tsp. organic vanilla
- 1-1/2 c. almond butter
- Chocolate Coating:
- 1 (12 oz) package Lily’s dark chocolate chips
- ½-1/3 bar Gulf paraffin wax
- Cutting paraffin wax into chunks (will melt faster and more evenly).
Instructions
- Combine “ball” ingredients in a bowl until well blended.
- Roll into 1-inch balls.
- In a double boiler
- Stir chocolate and wax until smooth.
- Dip each nut butter ball into the melted mixture
- Let chocolate covered balls cool and harden on wax paper.
- Store in refrigerator for use in 1-2 weeks; store in freezer for longer periods.
- Let soften, slightly, before serving.
