Ingredients
- Cookie Dough:
- 1/2 c. butter (I use Delamere Goat Butter)
- 1/3 c. granulated sugar (or monk fruit sweetener)
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1-1/4 c. all-purposed flour (or almond flour)
- 1-1/3 c. chopped walnuts
- Walnut halves for topping
- Cream Cheese Icing:
- 2 tbsp softened butter (I use Delamere Goat Butter)
- 1/4 tsp organic vanilla
- 2 oz organic cream cheese
- 4 tbsp Swerve Confectioner's sugar
Instructions
- Cream together the butter, sugar, salt, and vanilla.
- Blend in flour and walnuts, using hands to form dough into a ball.
- Chill dough for 30 minutes.
- Use rolling pin on a lightly floured surface, roll dough to ¼ inch thickness.
- Cut with cookie cutter.
- Bake on an ungreased cookie sheet for 10-12 minutes, at 350 degrees, or until lightly browned.
- Cool on wire rack.
- Frost with cream cheese icing and top with a walnut halve.
