Throughout this website I will refer to “dairy-free,” and then go on to include recipe ingredients such as goat cheese or goat butter… or maybe I refer to “ice cream!” Dear reader, I know this may be confusing, so I wanted to let you know what I mean when I say “dairy-free.”
I am referring to a food product that is not made from A-1 cow’s milk. A-1 cow’s milk (milk produced by the breeds of Holstein, Friesian, Ayrshire, and British Shorthorn) contains the harmful A-1 beta-casein, which encourages fat storage by promoting inflammation. Preliminary studies point to A-1 beta-casein playing a leading role in Type-1 Diabetes, heart disease, sudden infant death syndrome, AUTISM, leaky gut syndrome and inflammation!
The vast majority of American dairy products (milk, cheese, butter and yogurt) are made from harmful A-1 cow’s milk – – this is the type of dairy from which you should be “free.”
As espoused in Dr. Gundry’s lectin-free protocol, I completely gave up dairy (yet, another previous vegetarian staple of mine)… but I have replaced:
Cow milk with almond milk;
Cow and soy protein powder with goat milk protein powder;
Cow cheeses with goat cheese, sheep cheese, and Parmigiano-Reggiano;
Cow yogurt with goat yogurt;
Cow butter with goat butter,
…and cow ice cream with So Delicious coconut-milk (no sugar added) ice cream and Rebel ice cream (which is made with cream (heavy cream doesn’t contain the harmful casein… nor does sour cream or cream cheese!).
And Voila! Easy-peasy! You know, I never really thought that I was sensitive to dairy, but now that I’m sans A-1 cow products I am much less gassy (yes, I did say that!) and my whole digestive process is, well, uneventful! Yay! I strongly believe this has everything to do with my decrease in inflammation.
Bottom Line: A-1 Milk Products are not good for you.

Good information. Just wondering if the milk from Daisy, a Guernsey (and the “alpha cow” in the dairy herd of my childhood) was A-1.

It’s good to know that sour cream and cream cheese do not contain harmful casein because I cook with sour cream and Bryant loves cream cheese! I’m sharing!
